Bacon-wrapped feta cheese on lamb's lettuce

Ingredients for 6 servings:

  • 300 g lamb’s lettuce (corn salad)
  • 1 garlic clove(s)
  • 250 g smoked sheep’s cheese
  • 250 g lean bacon, sliced
  • Pumpkin seed oil
  • Vinegar
  • Water
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Trim and wash the lamb’s lettuce, and drain well. Rub a salad bowl with the garlic clove, add the lamb’s lettuce, and drizzle with plenty of pumpkin seed oil. Combine the vinegar, a little water, salt, and pepper, pour over the salad, and mix well. Cut the feta cheese into 12 pieces and chill thoroughly. Then wrap each piece of cheese with two slices of bacon and grill or pan-fry until crispy. Divide the lettuce among plates, arrange the cheese pieces on top, and season with freshly ground pepper, if desired.
