Baden potato salad

Ingredients for 6 servings:

  • 1 ½ kg potatoes (waxy)
  • 2 m.-sized onion(s)
  • 3 tbsp oil
  • 4 tbsp vinegar (wine vinegar)
  • 1 tsp vegetable broth
  • 3 tbsp mustard, grainy
  • Salt
  • pepper
  • 250 g meat sausage (piece)
  • 6 m.-large gherkins
  • 200 g cheese, medium-aged Gouda
  • 1 bunch of chives

Instructions

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

Wash the potatoes and boil, covered, for about 20 minutes. Rinse, peel, and let cool. Peel and finely dice the onions. Sauté in hot oil. Deglaze with 3/8 liters of water and vinegar, and bring to a boil. Stir in the stock and mustard, and season. Slice the potatoes and mix with the hot marinade. Let stand for about 1 hour. Thinly slice the sausage and cucumber and dice the cheese. Stir everything into the potatoes. Let stand, covered, for at least 4 hours. Season the salad with salt and pepper. Wash the chives, finely chop them, and sprinkle them over the top.
