Ingredients for 4 servings:

  • 600 g potato salad
  • 300 g meat salad
  • 300 g salad (red herring salad)
  • 6 eggs, hard-boiled
  • 90 g mayonnaise, 80%
  • 45 g yogurt
  • 100 g salmon substitute (smoked pollock schnitzel)
  • 20 g caviar, German (lumpfish roe)
  • 2 small gherkins
  • Parsley for garnishing

Working time approx. 15 minutes; Total time approx. 15 minutes

Serve it on four serving plates as follows: Place 150g of potato salad in the center of the plate. To the left and right of it, place 75g each of herring salad and meat salad. Mix the mayonnaise with yogurt and add a little more water if necessary. The sauce should be semi-liquid. Halve the hard-boiled eggs and place three egg halves, yolk-side up, on top of the potato salad. Drizzle the mayonnaise over the eggs and garnish with salmon schnitzels, caviar, half pickled gherkins (cut into fan-shaped wedges), and parsley.
