Ingredients for 2 servings:

  • 2 bagels
  • 1 avocado(s)
  • some lemon juice
  • salt and pepper
  • 125g mozzarella
  • 2 vine tomatoes
  • 20 g arugula

Instructions

Halve the bagels and toast them in a contact grill or toaster. Meanwhile, halve the avocado. Remove the pit. Score the flesh lengthwise and crosswise and scoop it out of the skin with a spoon. In a bowl, mix the flesh with lemon juice, mash it a little more with a fork, and season generously with salt and pepper. Wash the tomatoes and arugula. Slice the tomatoes and mozzarella. Spread the avocado mixture on the bagel halves. Then drape the arugula on the bottom halves, top with the mozzarella and tomatoes, and season with more salt. Place the top half on top and serve the bagels.
