Bread in a jar for longer shelf life
Unfortunately, bread spoils quickly or becomes dry.
- If you bake your bread in a jar, it will keep for up to several months. In addition, the bread has an even shape and is, therefore, easier to slice.
- You don’t need special jars if you want to bake bread in jars. The only requirements for the glass are that it is heat-resistant and large enough and does not narrow at the top. Otherwise, you won’t get the bread out of the jar intact. Normal jars in the form of a tumbler are ideal.
Recipe 1: Spelled bread in a glass
The quantities are sufficient for two loaves of bread in 500ml glasses.
- You need 250g spelled flour, half a cube of fresh yeast, or alternatively a packet of dry yeast, two teaspoons of agave syrup, half a teaspoon of salt, and 180ml of lukewarm water.
- First, prepare the glasses. Brush the inside of the glasses with some oil and put a handful of breadcrumbs in the glass. Distribute the breadcrumbs by turning the jar. You can use what’s left over for the next glass.
- Now dissolve the yeast with the salt in the water.
- Then add the flour and agave syrup and mix it into a smooth dough.
- Divide the finished dough into two equal parts and put a dough dumpling in each of the two glasses. He must not take more than half of the glass.
- Cover the jars with a clean cloth and let the dough rise in a warm place for about 3 hours.
- Then place the jars without lids in the oven preheated to 220 degrees and bake the bread for about 20 minutes.
- After baking, leave the jars in the switched-off oven for another 10 minutes with the door slightly open.
- After that, the bread should have cooled down enough for no more condensation to form on the lid if you put it on for a short time.
- If this is the case, close the jars and place them on a slightly higher baking tray. If you use jars, make sure that the rubber rings are in the right place and that the clips close well. The rim of the jar should be clean, i.e. free of oil or encrustations when you seal the jar.
- Fill the baking tray with about 2 cm of warm water and put the bread in the oven at 90 degrees for about 30 minutes.
- Then let the bread cool down completely in the glass. Then it should keep for several months.
Recipe 2: Olive oil bread in a jar
The procedure is similar to the first recipe.
- For two loaves of bread, you need 200g of wheat flour, a quarter of a cube of fresh yeast or half a packet of dry yeast, 50ml of olive oil, half a teaspoon of salt, and 125ml of lukewarm water.
- First, redissolve the yeast and salt in the water.
- Divide the dough in half and place it in the two glasses. The jars should be prepared as described in the first recipe. The dough must then also rise in a warm place for hours.
- The baking time for olive oil bread in a glass is again 20 minutes in the oven preheated to 220 degrees.
After the baking time, proceed as described for spelled bread to preserve the bread.
