Baked apples with pistachios

Ingredients for 6 servings:

  • 6 large apples, e.g. Boskop
  • ½ lemon(s), the juice
  • 200 g marzipan
  • 125 g raisins
  • 100 g almond(s), chopped
  • 25 g pistachios, chopped
  • 200 g apricot jam
  • 1 tbsp, sifted cardamom
  • 10 ml rum flavoring
  • 1 tbsp margarine or butter
  • 1 pack of sauce powder (vanilla sauce without cooking)
  • 200 ml milk or cream

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Baked apple with marzipan, pistachios and cardamom

Using a small spoon or pastry spoon, cut a circular hole into the stem of the apples, then hollow out the cores. Immediately sprinkle the insides with squeezed lemon juice to prevent the cut surfaces from browning. In a bowl, mix the marzipan, raisins, almonds, pistachios, apricot jam, cardamom, and rum flavoring and fill the apples with the mixture. Spread a little margarine on the tops. Place the apples on baking paper, roast in the oven at 180°C for 40 minutes, and then serve on plates. Whisk the vanilla sauce with milk or cream and pour over the apples.
