Uzbek appetizer

The basis for this appetizer, which is widespread in Uzbekistan and particularly popular in summer, is qatiq. This Central Asian dairy product tastes similar to Turkish ayran, but has an almost yogurt consistency. In Germany, I would try Greek or Turkish yogurt. Mix the salt with the qatiq well, place the mixture in a linen cloth, and let it drain in a sieve in the refrigerator overnight. To serve, spread it evenly on a plate and sprinkle with paprika. It tastes delicious with fresh bread.
