Baked avocado toast

Ingredients for 4 servings:

  • 4 slices of toast
  • 2 tbsp butter
  • 2 avocados
  • 2 shallots
  • 1 tbsp tarragon, chopped
  • 150 g cream cheese
  • 1 tsp mustard, hot (Dijon mustard)
  • 2 tbsp cheese, grated
  • some butter, in flakes
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the shallots and fry in butter for 2-3 minutes. Toast the bread slices (you can trim the crusts if you like, but I leave them on) and brush them with butter on both sides. Place them in an ovenproof dish. Peel the avocados, halve them, and slice them thinly. Season well and spread them on the bread slices. Mix the quark with the shallots, tarragon, and mustard and season with salt and pepper. Spread them on the avocados. Sprinkle everything with cheese, dot with butter flakes, and bake in the oven for about 10 minutes, until the cheese has melted.
