Baked butternut squash

Ingredients for 4 servings:

  • 1 butternut squash, approx. 35 cm long
  • 1 onion(s), diced
  • 200 g smoked bacon, diced
  • 100 g sour cream
  • 100 ml cream
  • 1 bunch fresh herbs (e.g. parsley, chives), chopped
  • n. B. garlic
  • salt and pepper
  • n. B. Oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Deseed and peel the pumpkin, and slice it into 1.5–2 cm slices. Fry in a pan in oil on both sides, then cook with the lid closed for about 10 minutes. Place the pumpkin slices in a casserole dish and season with salt and pepper. Sauté the bacon and onions in the pan. Mix the sour cream, garlic, and fresh herbs with the onions and bacon, season with salt and pepper, and pour over the pumpkin slices. Bake in the oven at 200°C (top/bottom heat) for about 15 minutes. Serve with white bread and salad.
