Baked Cauliflower with Champions and Olives

The perfect baked cauliflower with champions and olives recipe with a picture and simple step-by-step instructions.

  • 1 medium sized Cauliflower, cleaned, washed and divided into florets
  • 400 g Mushrooms, cleaned and halved
  • 100 g Olives green or black
  • 2 Garlic peeled, chopped
  • Juice of 1/2 lemon
  • Salt and freshly ground black pepper
  • Some fresh coriander leaves
  • 100 ml Olive oil
  1. Cook cauliflower in boiling salted water for 2-3 minutes, then drain and rinse with cold water.
  2. Preheat the oven to 200 degrees, mix the mushrooms and olives in a large bowl with the cauliflower.
  3. Mix the olive oil, garlic, salt and pepper in a small bowl, pour this mixture over the cauliflower vegetables and mix well.
  4. Place the vegetables in a large baking dish and bake in the preheated oven for about 15 minutes until they are golden brown, then sprinkle with coriander leaves, drizzle with lemon juice and serve.
