Ingredients for 2 servings:

  • 4 potatoes
  • 2 tomatoes
  • 1 ball of light mozzarella
  • 2 chicken breast fillets
  • 2 tbsp olive oil
  • salt and pepper
  • rosemary
  • 1 bell pepper(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

simple and delicious

Cut the peppers and potatoes into small pieces, and slice the tomatoes and mozzarella. Lightly coat the baking dish with olive oil. Place the chicken fillet in the baking dish and arrange the peppers and potatoes around it. Now alternate the tomatoes and mozzarella over the fillets, ensuring they are completely covered. Dice the remaining ingredients (if there’s any leftover) and spread them in the baking dish. Season everything with pepper, salt, and rosemary and bake in the oven at 200°C (400°F) for 30 minutes.
