Ingredients for 4 servings:
- 4 chicken breast fillets
- salt and pepper
- Flour
- 3 tbsp butter
- 2 tbsp oil and butter for frying
- Butter for the mold
- 8 slices of cooked ham or prosciutto, halved
- 8 slices of cheese (e.g. Bel Paese, Italian butter cheese)
- 5 tbsp Parmesan, freshly grated
- 250 ml chicken broth or chicken stock
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Preheat the oven to 160°C (top/bottom heat). Using a sharp knife, carefully slice each chicken breast horizontally to create 8 thin slices. Season the slices with salt and pepper and flour them. Shake off any remaining flour. Fry the chicken fillet slices in a pan with oil and butter over moderate heat until golden brown. Place in a shallow, buttered, ovenproof dish. Place a slice of ham on each slice of chicken, then top with cheese. Sprinkle with Parmesan cheese and pour over the chicken stock. Bake uncovered in the hot oven on the middle rack for about 10-15 minutes, until the cheese is melted and lightly browned. Serve with tagliatelle and peas “Romano-style.”
