Ingredients for 4 servings:
- 4 large chicken breasts
- salt and pepper
- 2 tbsp butter for frying
- 40 g butter
- 1 tbsp flour
- 1 ½ dl chicken broth
- 1 ½ dl cream
- 1 bunch of chives
- 120 g cheese (Appenzeller)
- 8 slices of baguette
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Season the chicken breasts with salt and pepper. Melt the 2 tablespoons of butter in the pan. Brown the meat briskly for 2 minutes. Remove from the pan and let cool slightly. Meanwhile, melt the butter in a small saucepan, add the flour and cook briefly while stirring. Deglaze with the stock and cream and bring to a boil. Simmer gently for 2 minutes. Remove from the heat. Cut the chives into rolls. Finely dice the cheese. Add both to the sauce. Season again if necessary. Once cooled, slice the chicken breasts diagonally. Arrange on the slices of bread and place in a gratin dish. Pour the sauce over the meat and immediately bake in an oven preheated to 220°C for approx. 12-15 minutes.
