Baked cod fillet

Ingredients for 2 servings:

  • 4 slices of cod fillet
  • 1 lemon(s) (organic), the juice
  • 750 g leek
  • 3 tbsp oil
  • 20 g butter for the molds
  • 200 g cream cheese
  • 3 tbsp milk
  • 1 bunch of mixed herbs (e.g. parsley, chives, cress…)
  • salt and pepper
  • Paprika powder
  • lemon juice
  • some water

a delicious, healthy fish dish

Clean the cod fillets, season with salt (toss in lemon juice), and lightly salt both sides. Trim and wash the leeks, then slice into fine rings. Heat the oil and add the leeks. Sauté for about 5 minutes, then season. Grease one or more casserole dishes with butter, add the leeks, and place the fish fillets on top. Pour a little water over them. Mix the cream cheese with the milk. Finely chop the herbs and mix into the cream cheese mixture. Season to taste with the spices and lemon juice, then spread over the fish fillets. Place the dish in a cold oven and bake at 200°C for about 35 minutes. The baking time varies depending on the type of oven. We used an industrial conveyor oven.
