Ingredients for 4 servings:

  • 4 slices of feta cheese, about 1.5 cm thick
  • 1 large tomato(s), thinly sliced
  • 1 tsp thyme, shredded
  • 15 olives, black
  • 1 m.-sized onion(s), thinly sliced
  • 4 Piri-Piri or Pepper
  • 4 tbsp olive oil
  • ½ lemon(s), the juice
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place a slice of feta cheese on a piece of aluminum foil (double the size of the cheese to allow for wrapping). Mix together the oil, lemon juice, and thyme and season with salt, pepper, and paprika. Top the feta cheese slices with tomatoes, onions, olives, and piri-piri (or chili peppers) and drizzle with the oil mixture. Close the aluminum foil and bake in a preheated oven at 200°C (grill setting) for about 10 minutes.
