Baked fish with basil butter

Ingredients for 1 servings:

  • 250 g fish fillet(s), e.g. pangasius, plaice, cod
  • 25 g butter
  • 1 handful of basil leaves
  • 1 garlic clove(s)
  • Salt
  • Cayenne pepper
  • 1 tbsp capers, from the jar
  • 80 g olives
  • 2 tbsp lemon juice, freshly squeezed

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Thaw the fish fillets according to the package instructions. Remove the butter from the refrigerator and let it soften. Preheat the oven to 180°C (top/bottom heat: 160°C). For the basil butter, finely chop the basil leaves and peel the garlic clove and press it through a press or finely chop it. Mash the butter and mix well with the basil and garlic using a fork, then season with salt and cayenne pepper. Rinse the fish fillets with cold water, pat dry with kitchen paper, and season both sides with salt and cayenne pepper. Rub some basil butter in a heatproof pan, add the fillets, and scatter the remaining butter on top. Drain the capers and olives and add them to the fish, drizzle with lemon juice. Bake in the oven at 180°C (center) for 8-10 minutes.
