Baked Goat Cheese on Gilded Ice

- 250 g Goat cheese
- 50 g Roasted almonds
- 5 Pc. Frozen puff pastry
- 2 drops Truffle oil
- 200 ml Port wine
- 40 g Sugar

- Divide the cheese into 5 equal pieces, press 3-4 almonds in the middle and wrap small packets with the puff pastry. Bake the cheese packets until they are golden brown. In the meantime, reduce the port wine and sugar and reduce. To serve, arrange a scoop of ice cream with the goat cheese packet and add a little port wine reduction around it and garnish with a few almonds.

- Whip the cream until stiff and heat a saucepan as a water bath. Beat the eggs and beat them in a water bath with the mixer until they are white and frothy. If you want, you can put the truffle oil directly into the machine, or afterwards, then mix it by hand, or you let the ice cream defrost briefly the next day and take the desired amount of oil and refine the ice cream.
