Baked hunter's schnitzel

Ingredients for 4 servings:

  • 4-minute pork schnitzel
  • 1 egg(s)
  • Flour
  • Breadcrumbs
  • salt and pepper
  • paprika
  • 400 g mushrooms, brown, sliced
  • 100 g bacon, lean, diced
  • 2 onions, diced
  • 1 garlic clove(s), chopped
  • 2 tbsp sherry
  • 1 cup crème fraîche
  • Thyme
  • 2 tomatoes, sliced
  • 100 g cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Season the schnitzels with salt, pepper, and paprika. Coat in flour, beaten egg, and breadcrumbs, and coat with breadcrumbs. Fry in a little fat on both sides for about 2 minutes. Transfer to a baking dish and set aside. Sauté the bacon and onion cubes in the pan. Add the mushrooms and garlic and cook for about 10 minutes, stirring frequently. Stir in the sherry and crème fraîche. Season with thyme and pepper. Spread the mushroom mixture over the schnitzels, arrange the tomato slices on top, and sprinkle with cheese. Bake in a preheated oven at 180°C for about 20 minutes. Serve with French fries or croquettes.
