Ingredients for 4 servings:
- 3 stalk(s) leeks
- 30 g butter and 30 g flour
- 125 ml vegetable stock
- 2 egg yolks
- Salt and pepper, freshly ground
- 8 slices of toast

- 100 g cheese, grated
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean and wash the leeks and cut them into thin slices. Cook them in a little salted water for 10 minutes, then drain them in a sieve. Heat the butter, stir in the flour, and make a light roux. Gradually add the vegetable stock or cooking liquid and simmer while stirring until a thick sauce forms. Finally, add the egg yolks; the sauce should not be boiling at this point. Fold in the leeks and season with salt and pepper. Toast the slices of bread until light brown. Spread with butter and top each with a slice of ham. Spread the leek sauce thickly over the slices and sprinkle with grated cheese. Grill the leek slices until golden brown. Serve with a crisp, fresh salad.
