Ingredients for 6 servings:

  • 1 onion(s)
  • 1 large carrot(s)
  • 350 g minced beef
  • 500 g tomatoes, pureed
  • 6 large mushrooms, brown
  • 6 slices of processed cheese
  • some salt and pepper
  • Herbs, Italian
  • Coconut oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Heat 1 teaspoon of coconut oil in a non-stick pan. Dice the onion and carrot. Sauté one at a time. Add the minced meat; brown and top with the passata. Simmer on low heat for about 30-45 minutes. Season with salt, pepper, and Italian herbs, if desired. Set aside. Preheat the oven to 180°C (fan oven). Trim 6 mushrooms (about 400g). Line a baking sheet with baking paper. Brush the mushrooms with a little coconut oil (or oil to taste). Fill well with the minced meat filling. Place a slice of processed cheese on each one.
