Day laborer's potato soup

Ingredients for 3 servings:

  • 1 bunch of soup vegetables
  • 1 liter of water
  • 500 g potatoes
  • 50 g bacon
  • 1 m.-sized onion(s)
  • 25 g lard
  • 2 bay leaves
  • e.g. salt and pepper
  • 10 ml vinegar
  • 1 tsp mustard
  • 2 Vienna sausages, sliced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Clean and finely chop the soup vegetables, then add to 1 liter of water and boil. Grate half of the raw potatoes and dice the other half. After 10 minutes of cooking, add the diced potatoes and cook until tender. In the meantime, dice the bacon and onions and fry in hot lard or until translucent. Once the potatoes are tender, add the grated potatoes, the bacon and onion mixture, and the bay leaves and simmer over medium heat for another 10 minutes. Season generously with pepper, salt, vinegar, and mustard. At the end of the cooking time, add the previously sliced ​​sausages and heat for 5 minutes. Do not boil further.
