Ingredients for 4 servings:
- 200 g oyster mushrooms
- 2 m.-sized eggs
- 90 ml wine
- 80 g flour
- 1 tsp oil
- 250 g quark
- 1 clove(s) garlic
- 1 pinch(s) lemon zest
- 1 tbsp herbs, finely chopped (chives, parsley, basil, tarragon or sorrel)
- salt and pepper
- Fat, for frying
- Sugar
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Clean the oyster mushrooms and halve them if necessary. Whisk together the eggs, wine, and oil, season with salt, and pepper. Add the flour and mix well. Dip the mushrooms in the wine batter and fry in hot fat (approx. 160-170 degrees Celsius) until golden brown. Drain on a paper towel and season. Place the quark in a bowl. Finely chop the garlic and add it to the remaining ingredients and mix. Season with salt, pepper, and a pinch of sugar. To serve: Arrange the baked mushrooms on a plate, serve with the dip, and enjoy! Enjoy! This recipe is just one of a series of suggestions for mushroom variations.
