Ingredients for 4 servings:

  • 350 g potatoes, floury
  • 1 egg yolk
  • 3 tbsp flour
  • 3 tbsp durum wheat semolina
  • Salt
  • nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Basic recipe – Make your own gnocchi

Wash the potatoes and cook in salted water. Let them cool slightly, peel them, and press them through a potato ricer. Add the egg yolk, flour, and semolina. Season with salt and nutmeg. Mix everything together to form a dough. Make a test gnocchi and cook it in boiling water to see if it sticks. Add a little more semolina and flour if necessary. On a floured surface, roll out the dough with your hands, cut into pieces, and shape into gnocchi. Make ridges with a fork and cook in salted water for about 4 minutes until they rise to the surface. Drain and serve with a sauce or fry in a pan with butter.
