Baked pork fillet in tomato-basil sauce with spicy peppers

Ingredients for 2 servings:

  • 450 g pork fillet(s)
  • some pepper, spicy, whole, amount according to desired spiciness
  • 1 can of chopped tomatoes with basil
  • ½ tube(s) tomato paste
  • 2 tbsp Italian herbs, frozen
  • some pizza seasoning
  • Grilled cheese tomato-basil
  • Salt
  • chili
  • pepper
  • Oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Cut the fillet into slices about 2-3 cm thick and season both sides with salt, pepper, chili, and paprika. Heat oil in a pan (I used basil-flavored rapeseed oil) and sear the fillet for about 2-3 minutes on each side. Remove from the pan and place in a baking dish. Briefly sear the peppers in the same pan, add the can of tomatoes, and top up with tomato paste and water, depending on how much sauce you like. I added about half a tube of tomato paste and about 200-300 ml of water. Season the sauce to taste. I added Italian herbs and a bit of pizza seasoning to give the sauce a nice flavor. Pour the sauce over the fillet in the baking dish and top the fillet pieces with feta. I used Patros’ grilled cheese with basil and tomato marinade and cut it in half crosswise so the pieces weren’t too thick. Then I put everything in the preheated oven at 180 degrees Celsius for about 30 minutes.
