Baked potato dumplings with yogurt sauce

Ingredients for 4 servings:

  • 4 dumplings (potato dumplings) from the day before
  • 2 eggs
  • some flour
  • some milk
  • breadcrumbs
  • butter
  • 2 cups yogurt
  • 1 tsp parsley, finely chopped
  • 2 tbsp vegetable broth, strong
  • Salt and pepper, black

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the dumplings. Beat the eggs with a whisk and gradually add enough flour to make the batter very thick. Then add enough milk until the batter drips heavily from the whisk. Season with salt and pepper. Dip the dumpling slices into the batter and coat them well in the breadcrumbs. Melt butter in a pan and fry the dumpling slices until golden brown. For the yogurt sauce, combine the yogurt with the parsley, broth, and seasonings. Serve the sauce with the dumplings.
