Ingredients for 4 servings:

  • 500 g potatoes
  • 2 tbsp extra virgin olive oil
  • 20 g butter
  • 1 pinch(s) of cayenne pepper
  • 1 tsp salt
  • 1 onion(s)
  • 1 pinch(s) thyme

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Patate arrosto, an Italian version of the famous Hasselback potatoes

Preheat the oven to 175 degrees Celsius. Peel the potatoes and slice them into 2 mm thick slices using a mandoline. Place the olive oil, butter, salt, and cayenne pepper in an ovenproof ceramic or glass casserole dish (approximately 20 x 20 cm) and place in the oven until the butter has melted. Remove the dish from the oven, add the potato slices, and mix well until the potato slices are coated in the fat mixture. Then put the potato slices back together and place them back upright in the casserole dish in the shape of a long sausage, so that the dish is almost lined with potato slices and the individual slices cannot fall over. Bake the potatoes in the preheated oven for approximately 1 hour and 10 minutes. Meanwhile, slice the onion and scatter it over the potatoes after 40 minutes. Sprinkle the thyme over the potatoes 5 minutes before the end of the cooking time.
