Ingredients for 4 servings:
- 1 kg potatoes
- 2 m.-sized onion(s)
- oregano
- salt and pepper
- olive oil
- 3 balls of mozzarella
- 300 g cherry tomatoes
- 50 g butter

vegetarian potato dish from Trapani in Sicily, for a casserole dish
Peel the potatoes and cut into large chunks. Place them in a casserole dish with the finely chopped onions, oregano, salt, pepper, and olive oil in a preheated oven at 180°C (350°F) fan/200°C (400°F) for 45 minutes. Just before the potatoes are tender, test with a toothpick. Mix with the torn mozzarella and tomatoes, and sprinkle with the butter flakes on top. Return to the oven until the cheese has thickened. You can omit the cherry tomatoes. I know several variations of this recipe, some with tomatoes, some without, and some with significantly fewer.
