Baked potatoes à la Mimi

Ingredients for 2 servings:

  • 750 g potatoes, small
  • 2 small red bell peppers
  • 1 shot of germ oil
  • 1 tbsp herbs de Provence
  • 1 tbsp parsley
  • 1 tbsp chicken seasoning
  • salt and pepper
  • 250 g mushrooms, fresh
  • 2 small shallots

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

delicious variation to meat or even on its own

Wash the small potatoes and then quarter them, do not peel them! Place them in a bowl and marinate with the oil, herbs, salt, and pepper. Deseed the peppers and then cut them into roughly the same size as the potatoes. If using mushrooms, clean and halve them, and slice the shallots into rings. Spread the marinated potatoes evenly in a baking dish, then top with the vegetables. Place everything in a preheated oven at 180°C (convection oven) for about 40 minutes, depending on the size of the potatoes. Serve with grilled or roasted meat and a nice fresh herb curd or tzatziki.
