Baked potatoes filled with minced meat

Ingredients for 4 servings:

  • 250 g minced meat, mixed
  • 4 large waxy potatoes
  • 100 g smoked bacon
  • 2 small onions
  • 2 tbsp oil
  • 1 egg(s)
  • salt and pepper
  • ½ tsp thyme
  • 50 g Emmental cheese, grated
  • 200 g sour cream
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Boil the potatoes until almost tender, peel them and halve them lengthwise. Carefully scoop out the flesh with a spoon. Finely dice the boned potato flesh, bacon and onions. Heat the oil in a pan and sauté the bacon and onion cubes until lightly browned. Add the minced meat and fry as well. Season the mixture with salt, pepper and thyme. Finally, briefly fry the potato flesh. Allow to cool slightly, then thoroughly mix the egg with the meat and potato mixture and the grated cheese. Brush a baking tray or roasting tin with butter. Place the potatoes on top, fill with the minced meat mixture and bake for 25 minutes in a hot oven at 200 degrees Celsius (180 degrees Celsius fan-assisted). Spoon 1 teaspoon of sour cream on each one and sprinkle with chopped parsley before serving.
