- 10 m.-sized potatoes, waxy, red or white
- olive oil
- Mixed herbs, Italian or French style
- pepper
- garlic powder
- tarragon
- Spice mix for poultry
- Fondor or Aromat
- chili powder
- rosemary
- Thyme

Wash the potatoes and cut them in half lengthwise without peeling them first. Using a sharp, pointed knife, make deep, cross-shaped incisions along the cut sides. Place the potato halves, cut-side up, on a wire rack or baking sheet. Sprinkle evenly with spices, then with the shredded herbs. Finally, drizzle olive oil over each potato half and place on the middle rack of a cold oven. Bake for approximately 20-30 minutes at 180°C to 200°C, until the potatoes are golden yellow. Ideal with grilled food, salads, or simply on their own with tzatziki.
