Ingredients for 4 servings:
- 4 large waxy potatoes
- 250 g bacon
- 250 g onion(s)
- 4 cloves garlic
- 1 bunch of parsley
- 1 bunch of chervil
- 200 g crème fraîche
- Salt
- Marjoram, shredded
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 200°C. Wash and brush the potatoes, then halve them lengthwise. Cut the rind off the bacon and rub it into an ovenproof dish. Add the potatoes cut-side up and sprinkle with salt. Bake in the oven for 45 minutes. In the meantime, peel and chop the onions and garlic cloves. Dice the bacon and fry in a pan over low heat. Fry the onions and garlic until translucent. Wash and chop the parsley and chervil, and mix with the onion and bacon mixture. Remove the potatoes from the oven and scoop out some of the insides. Stuff the onion mixture into the potatoes, then spread the remaining mixture around them. Place a dollop of crème fraîche on each potato half. Bake in the oven for another 10 minutes. Serve sprinkled with marjoram.
