Baked potatoes with hearty filling

Ingredients for 4 servings:

  • 8 large potatoes
  • 2 cups of crème fraîche or sour cream
  • 3 slices of ham
  • 1 bunch of parsley
  • 1 bunch of chives
  • some dill
  • salt and pepper
  • butter

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven to 200°C. Wash the potatoes thoroughly, make a cross-shaped cut in the top, and wrap them in aluminum foil. Bake in the oven for about 60 minutes. Roughly chop the parsley and chives and dice the ham. Remove the potatoes from the foil, cut off a small top, and carefully scoop out the insides, leaving a small edge. Mash the potato mixture with a masher and mix with the crème fraîche, parsley, dill, chives, and the diced ham. Season generously with salt and pepper. Fill the scooped-out potatoes with the cream and sprinkle with knobs of butter. Bake at 200°C for about 25 minutes, until a light crust has formed. Tip: Fresh smoked salmon works very well instead of the ham.
