Mango, papaya, shrimp, noodles

Ingredients for 3 servings:

  • 250 g shrimp
  • 1 chili pepper(s), without seeds, finely sliced
  • 1 clove(s) garlic, finely diced
  • 6 cm ginger root, fresh, finely sliced
  • 400 g coconut milk
  • 5 tbsp oil (sesame oil)
  • 2 tbsp soy sauce
  • 1 mango(s), fresh
  • 1 papaya, fresh
  • 4 sprigs mint, fresh
  • 2 sprigs coriander leaves

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the mango and papaya, remove the seeds, and cut into coarse strips. Roughly tear the mint and coriander. Lightly fry the garlic, ginger, and chili in hot sesame oil. Add everything else and cook for 2 minutes. Remove the pan from the heat and add the drained shrimp. Garnish with some mint and coriander. Serve with rice or tagliatelle.
