Baked Potatoes with Tomato Butter

Ingredients
 

  • 4 Pc. Potato fresh unpeeled
  • 4 Pc. Chilli red fresh
  • 4 Branches Basil leaves
  • 100 g Butter
  • 1 Clove of garlic
  • 1 tbsp Tomato paste
  • Salt and pepper

Instructions
 

  • Cook the potatoes in a saucepan with plenty of water until soft. In the meantime, peel the garlic and finely chop for the tomato butter. Wash the chilli peppers, cut in half lengthways, core and finely chop. Pluck the basil from the stems and chop finely. Put the butter in a bowl, mix with the garlic, the chilli pepper, tomato paste and basil. Season with salt and pepper. When the potatoes are cooked, place them in aluminum foil and cut them open. Put 1 to 2 tablespoons of the tomato butter on top. And serve.
