Baked Pumpkin Slices

The perfect baked pumpkin slices recipe with a picture and simple step-by-step instructions.

  • 1 piece Large onion
  • 1 pole Celery
  • 1 piece Fresh ginger
  • 2 Toes Garlic
  • 1 piece Red chilli pepper fresh
  • 2 Handful Dried mushrooms
  • 100 g Grated Gouda
  • 1 piece Hokkaido pumpkin, small
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 1 tbsp Curry mix, freshly ground
  • Pepper from the grinder
  • Salt
  1. Let the dried mushrooms soak in warm water.
  2. Wash the pumpkin, hollow it out and cut into thin slices, unpeeled. Put the slices in an ovenproof dish and bake dry for 30 minutes at 180 degrees.
  3. Meanwhile, cut the onion, ginger, celery, chilli and garlic into small cubes. Heat the oil in the pan. First onion, then celery, ginger, chilli and finally garlic and freshly ground curry mixture in the pan and lightly roast.
  4. Chop the soaked mushrooms into small pieces and add them to the pan with the liquid, sprinkle with flakes of butter, season with salt and pepper and cook for about 20 minutes.
  5. Spread the pan over the pumpkin slices and bake for 30 minutes at 180 degrees. Spread the grated Gouda cheese 5 minutes before the end and let it bake. Sprinkle with fresh herbs as desired and serve.
