Baked pumpkin with honey and thyme

Ingredients for 2 servings:

  • 400 g pumpkin(s)
  • 2 tsp honey
  • 4 sprig(s) thyme, fresh or 1/2 tsp thyme dried
  • 1 tbsp extra virgin olive oil, cold squeezed
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Zucca arrosto in honey and tomato

Preheat the oven to 180 degrees Celsius. Spread a sheet of baking paper on a baking tray. Cut the pumpkin into approximately 3 cm thick slices, remove the seeds, and peel them. Put 2 teaspoons of honey into a plate and spread it evenly over the surface. Then dip a pumpkin slice into the honey on all sides, as far as possible, so that the pumpkin is lightly coated. Place it on the baking tray. Repeat with the other slices. Drizzle the slices with olive oil and sprinkle with salt, pepper, and thyme. Bake in the oven at 180 degrees Celsius for approximately 30 minutes. Turn the slices over after 15 minutes. Serve hot.
