Beluga lentil soup

Ingredients for 3 servings:

  • 1 cup beluga lentils
  • 3 cups vegetable broth
  • 1 pack of soup vegetables (2-3 carrots, 1 leek, 1 celery, parsley)
  • 1 onion(s)
  • 1 clove(s) garlic
  • some oil
  • salt and pepper
  • Chili as desired

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

simple, vegan, low-carb

Finely dice the vegetables (onion, garlic, carrots, celery, leek). Melt the butter in a saucepan (vegan alternative: oil), sauté the onions until translucent. Add the remaining vegetables and simmer briefly. Add three cups of broth and one cup of beluga lentils, and simmer for 20 minutes. Season with salt, pepper, and chili, if desired. Tip: Also delicious with potatoes and sausages. Rolls, bread, and spaetzle are suitable side dishes.
