Baked rice with chicken breast fillet and satay sauce

Ingredients for 4 servings:

  • 300 g chicken breast fillet(s)
  • 50 g celery
  • 150 g carrot(s)
  • 1 head of pak choi
  • 1 onion(s)
  • 4 cloves garlic
  • 4 tbsp oil
  • 1 package of sauce, satay sauce (ready bought) or homemade
  • 300 g rice
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cook the rice according to the instructions until al dente, rinse with cold water, and set aside. Coarsely grate the celery and carrots. Finely chop the onion and garlic. Cut the pak choi into strips and slice the chicken breast lengthwise. Mix 2 tablespoons of oil with 1/2 teaspoon of salt and half the garlic, and season the meat. Heat the garlic oil in a pan and sear the meat well, then remove. Add the remaining oil to the wok and heat. Fry the pak choi, onion, carrots, celery, and rice for about 3 minutes, then remove. Prepare the satay sauce. Serve the vegetable rice with the meat and satay sauce.
