Baked salmon with walnut crust

Ingredients for 6 servings:

  • 1.2 kg salmon fillet(s)
  • 60 g walnuts
  • 1 handful of mini tomatoes
  • 1 small onion(s)
  • 50 g Gouda, grated
  • n. B. herbs, chopped
  • ½ tsp mustard
  • 1 tbsp butter
  • 250 g Greek yogurt
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C top and bottom heat (180°C fan-assisted). Check the fresh salmon for bones, remove any skin, wash, and pat dry. Place the salmon in a baking dish. Wash the tomatoes. Finely chop the walnuts and onion, and cut the tomatoes into very small pieces. Add the grated Gouda and butter, and season with pepper and herbs and mustard to taste. Mix everything together and spread over the salmon, place in the oven, and bake for about 30-35 minutes. Season the yogurt with salt and pepper and serve as a sauce with the fish.
