Baked Spaghetti with Metaxa Sauce
The perfect baked spaghetti with metaxa sauce recipe with a picture and simple step-by-step instructions.
Metaxa sauce
- 500 ml Vegetable broth
- 2 tbsp Tomato paste concentrated three times
- 0,5 Clove of garlic
- 200 g Greek yogurt 10% fat
- 1 tbsp Sweet paprika
- 0,5 tbsp Green pepper
- Salt
- 6 cl Metaxa
aside from that
- 400 g Spaghetti
- 400 g Grated cheese
- Finely chop the garlic and mash it with salt to a paste and add to the broth in a saucepan. Add pepper, tomato paste and sweet paprika and let simmer (reduce).
- Cook the spaghetti al dente according to the instructions on the packet.
- Remove the reduced stock from the stove and stir in the yogurt and then the Metaxa. Now the sauce can be seasoned with salt, pepper and maybe lemon – depending on your taste.
- Put the spaghetti in the baking dish, cover with the sauce, pour cheese over it and bake at 180 ° C for about 15-20 minutes. We always take two small casserole dishes and for the meat eater, diced ham or fried gyros meat is added as desired.
