Baked tomatoes on arugula

Ingredients for 2 servings:

  • 1 pack of arugula
  • 100 g sheep’s cheese
  • 250 g tomatoes, chopped or halved cherry tomatoes
  • 1 tbsp brown sugar
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the chopped or halved tomatoes and diced feta cheese in a baking dish, drizzle with sugar, olive oil, and vinegar, and season with salt, pepper, basil, etc. (garlic would also be delicious). Bake in the oven at 180°C for about 20 minutes. Wash the lettuce and divide it among plates. Then top the lettuce with the feta cheese and tomatoes.
