Ingredients for 35 servings:
- 300 g almonds, peeled, ground
- 6 drops of bitter almond flavor
- 300 g sugar
- 3 egg whites
- 100 g icing sugar, for sprinkling
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix the almonds, bitter almond oil, and sugar. Beat the egg whites until stiff and gradually fold them into the almond dough. Form the dough—it shouldn’t be soft—into 4 1/2-cm balls. Line a baking sheet with parchment paper and place the almond macaroons on the baking sheet, leaving plenty of space between them. Bake in the oven on the middle rack until light golden brown, allowing them to dry quickly. Dust generously with powdered sugar while still warm. Cool slightly, then remove from the paper. Baking time: 30 minutes at 160°C (320°F).
