Baked tortellini

Ingredients for 4 servings:

  • 500 g minced meat, mixed or beef
  • 1 tsp salt
  • 1 tsp sugar
  • 5 g pepper
  • 5 g sweet paprika powder
  • 5 g rosemary
  • 5 g thyme
  • 5 g oregano
  • 2 tbsp tomato paste
  • 1 tsp potato starch
  • 500 g tortellini (dry product) or 800 g fresh
  • 6 slices of cooked ham
  • 2 onions
  • 200 g cream (cooking cream) or cream substitute
  • 200 g cheese, grated
  • 2 tbsp Clarified butter or oil for frying

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Brown the minced meat in 1 tablespoon of clarified butter. Season with salt, sugar, paprika, rosemary, oregano, and thyme, then fry in the tomato paste. Add the potato starch (important for binding with the cream sauce). Cook the tortellini according to the package instructions (dry tortellini usually take about 15 minutes, fresh tortellini 2 minutes). Finely chop the onions and fry them in the clarified butter with the cooked ham until translucent. Add the cream, thinning the sauce with a little milk if necessary. Stir the minced meat into the ham cream and then layer it in a dish with the tortellini. Finally, bake for about 30 minutes at about 200°C (convection oven) – it’s best to keep an eye on it and wait for it to look nice and golden. Tip: You can also replace some of the minced meat or add chopped vegetables such as mushrooms (300g minced meat + 400g mushrooms).
