Ingredients for 4 servings:
- 750 g tortellini with meat filling
- 1 tbsp olive oil
- 250 g sliced breakfast bacon
- ½ tsp chili pepper(s), dried and crushed
- 2 tbsp parsley, chopped
- 600 g tomatoes, chopped, from the can
- 125 ml water
- 1 small red pepper(s), cut into strips
- 2 large tomatoes, thinly sliced
- 60 g Cheddar cheese, grated
- 25 g Parmesan, grated
- 2 garlic cloves, crushed
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Cook the tortellini in a pot of water. Heat the oil. Cut the bacon into strips and fry for 2-3 minutes. Add the chili flakes, garlic, and parsley and cook for about 10 seconds, then add the chopped tomatoes and 125 ml of cold water. Simmer the sauce over medium heat for 10 minutes. Drain the tortellini and add them to the sauce with the bell pepper. Mix the ingredients well and then transfer to a 2-liter ovenproof dish. Place the tomato slices on top and sprinkle with the cheese. Place the dish in the oven preheated to 200°C (top and bottom heat) for about 5 minutes, until the cheese has melted. We usually serve it with a green salad as a side dish.
