Ingredients for 2 servings:
- 300 g tortellini, preferably from the fresh counter
- 1 package creamed spinach (frozen)
- 2 cloves garlic
- 1 small onion(s)
- 1 cup crème fraîche
- 150 g cheese, grated (Gouda or Emmental)
- oil

quick, vegetarian tortellini casserole
Preheat the oven to 200 degrees Celsius. Peel and dice the onion. Sauté in a little oil until translucent. Add the spinach and cook according to the package instructions, seasoning with salt and pepper. Cook the tortellini in lightly salted water until al dente, then transfer to a baking dish. Pour over the spinach and mix everything well. Finely chop or press the garlic and mix with the crème fraîche. Spoon large dollops of the mixture over the tortellini and sprinkle with the cheese. Bake the dish for about 15 minutes, until the cheese is golden brown.
