Baked zucchini

Ingredients for 4 servings:

  • 8 zucchini (100 g each)
  • 6 tbsp oil (olive oil)
  • 1 clove(s) garlic, squeezed
  • salt and pepper
  • 30 g Parmesan, grated
  • n. B. lemon wedge(s)
  • e.g. basil

Instructions

Working time approx. 5 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Clean the zucchini. Finely slice off the skin lengthwise on two sides. Make 1 cm deep cuts in the flesh of the peeled strips. Season the zucchini generously with salt and let it rest for 20 minutes. Then pat dry with kitchen paper and place in an ovenproof dish. Mix the olive oil with the garlic, drizzle over the zucchini, and season generously with pepper. Bake in a preheated oven at 200°C (top/bottom heat) for 20 minutes. After 10 minutes, sprinkle with 30 g grated Parmesan cheese. Serve hot, lukewarm, or cold, garnished with basil and lemon wedges.
