Baked zucchini gnocchi

Ingredients for 4 servings:

  • 1 kg zucchini, medium-sized specimens
  • 300 g minced meat, mixed
  • ½ pack of tomato puree
  • 1 onion(s)
  • salt and pepper
  • 100 g cheese (Gouda), grated
  • 2 tbsp oil
  • oregano
  • dill

Peel and dice the onion, and sauté in 1 tablespoon of oil until translucent. Add the ground beef and fry until crumbly. Pour in the tomato puree, season with salt, pepper, and oregano, and simmer for 10 minutes. Wash the zucchini, cut into approximately 1 cm-wide slices, briefly fry on both sides in 1 tablespoon of oil, and place them side by side on a baking sheet. Sprinkle with salt, pepper, and dill. Spread the Bolognese sauce over the zucchini slices, sprinkle with cheese, and bake in a preheated oven at 200°C for about 20 minutes. Serve with baguette. You can also use Parmesan, Pecorino, or mozzarella instead of Gouda.
