Baked zucchini rolls

Ingredients for 4 servings:

  • 2 large zucchini
  • 150 g cooked ham, sliced
  • 150 g cheese (Gouda)
  • Salt
  • 60 g flour
  • 2 eggs
  • 4 tbsp milk
  • 150 g breadcrumbs
  • Rosemary or thyme
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the zucchini, trim the ends, and cut lengthwise into 2-3 mm thick strips (e.g., using a bread slicer or a vegetable peeler). Season the zucchini strips with salt, pepper, and rosemary (or thyme). Cut the ham and cheese to the width of the zucchini strips. Top each zucchini strip with a strip of ham and a strip of cheese, roll tightly, and secure with a toothpick. Coat the rolls first in flour, then in the egg beaten with milk, and finally in breadcrumbs. Fry in hot oil over medium heat for about 4 minutes. Serve with herb cream or garlic dip, potatoes, and leaf salad.
