- 750 g Apple wedges
- 3 tablespoon Lemon juice
- 200 g Spelled flour type 630
- 200 g Ground almonds
- 200 g Raw cane sugar
- 150 ml Rapeseed oil
- 4 piece Organic eggs
- 1 tablespoon Cocoa powder
- 1 packet Baking powder
- 1 pinch Salt
- 1 teaspoon Ground cinnamon
- 1 Knife point Clove powder
- 2 piece Chocolate Icing
- 100 g Chopped almonds
- 2 tablespoon Sugar
- 20 g Butter
- Mix the apple wedges with lemon juice so that they don’t brown too quickly.
- Make a heavy batter from flour, almonds, sugar, eggs, oil, cocoa and the spices. Fold in the apple wedges and pour the whole thing into a greased and crumbled rectangular (35 x 24 cm) springform pan.
- Bake in a preheated oven at 175 degrees circulating air for about 40 – 45 minutes. (Toothpick sample). Let cool down completely after taking it out.
- Make brittle from almonds, sugar and butter in a pan, stirring constantly.
- Let the chocolate soak in the water bath and cover the cold cake with it. Sprinkle with the brittle immediately.
