Baking: Multi-fruit Cake without Baking
The perfect baking: multi-fruit cake without baking recipe with a picture and simple step-by-step instructions.
1st layer
- 150 g Biscuit crumbs – I had amarettini, rusks, and sponge fingers
- 100 g Dark couverture
- 80 g Butter
2 layer
- 1 piece Fresh mango
- 3 tablespoon Powdered sugar
- 3 sheet Gelatin white
- For lack of a whole mango, I took my mango puree
3rd and 5th shift
- 150 g Amarettini almond biscuits, whole
4th layer
- 500 g Natural yoghurt
- 1 piece Lemon fresh, here the juice
- 100 g Sugar
- 4 sheet Gelatin white
6th layer
- 500 g Fresh strawberries
- 1 packet Red cake topping
- 2 tablespoon Sugar
- 250 ml Water

- 8 piece Chocolate decor sheets
- 2 piece Strawberries
1. Schicht
- Crumble the biscuits – in the blender, in the food processor or with a rolling pin.
- Melt the butter and crushed couverture in a water bath and knead with the crumbs to form a dough.
- Make a cake ring to a diameter of 22 cm and place it on an oiled board. Pour in the crumbly dough, press it firmly and let it set in the refrigerator.

- Peel and roughly chop the mango. Mix with powdered sugar, bring to the boil and puree.
- Let the gelatine soak in a little cold water, squeeze it out and dissolve in the hot mango. Let cool down a bit and then place on the crumbly base. Let it become solid.

- Place a layer of Amarettini on top of the mango mixture.

- Let gelatine soak in a little cold water, squeeze out and dissolve over low heat.
- Mix the yogurt, lemon juice and sugar. Add two spoons of it to the dissolved gelatin, stir and then add this back to the rest of the yoghurt mixture. Mix well and spread over the amarettine layer. Let it set too.

6. Schicht
- Remove the stalk from the strawberries and cut half of them into small pieces.
- Make the icing with water and sugar according to the instructions and stir in the cut strawberries. Pour this mixture onto the Amarettini layer and let it solidify.
- After removing the cake ring, cut the remaining strawberries in half and place around the cake. Use some berries and a few mint leaves, as well as chocolate decor leaves to decorate.
- Unfortunately I don’t have a picture of the inside of the cake, because it was a birthday present for my friend Claudia – and of course for Ulrike (pasque flower) ;-)))))
